If you dream it…it shall grow!!!
Chef Alex dreamt last night that the corn was coming up! When he awoke this morning, and went to look at the field, he found it was true!
Alex, you may have missed your true calling … but we couldn’t live without you as chef and farmer.
Just some FYI: The corn which Alex is growing is Bear Island Chippewa Flint corn. This is a very hard variety of corn which is great for grinding. It’ll make a killer-good polenta. The actual ear of corn has 8-12 rows of kernels with yellow, pink, white, red and blue kernels.
This corn is an heirloom corn, and has never been grown in Michigan before. The reason is that corn is air pollinated. Because corn is one of the biggest commercial crops, it make heirloom and organic varieties hard to grow because cross-pollination is very prevalent. Alex is working hard to isolate this patch of corn and keep it virgin. How exciting!
