Lisa Schultz, Restaurant Manager
Born and raised right here in Ann Arbor, Lisa is a graduate of Eastern Michigan University and the University of Michigan. Having worked at several different Ann Arbor-based companies and restaurants, Lisa found her way to the Zingerman’s Community of Businesses in 2004, beginning work at the Roadhouse in the front of the house as a server. Working her way up to an Assistant Restaurant Manager and then becoming the Restaurant Manager in 2013, Lisa has played an integral role in creating the service culture of the Roadhouse. She established the Roadhouse Service Group, and has a passion for providing excellent service with a focus on helping the managers and staff be the best they can be everyday.
Outside of her time spent at the Roadhouse, Lisa enjoys spending time with her three young children and husband, trying new restaurants and different cuisines, and reading and running.
Caitlin Doyle, Catering Manager
After graduating from Michigan State University in 2009 with a degree in Hospitality Management, Caitlin set her sights on working at Zingerman’s. She called up Ari and asked to meet him for coffee and after talking, decided Zingerman’s was a great fit for her first job out of college. She was hired at the Roadhouse as a door runner/maitre’d and quickly worked her way up to supervisor then Assistant Restaurant Manager, and began working events in the catering department. In early 2015 Caitlin moved into the catering department full-time, accepting the position as Catering Manager.
While working in the ZCoB, Caitlin has had the opportunity to attend the Great Game of Business in St. Louis, MO, then won a staff scholarship and was accepted into a three-month internship with Ballymaloe Cookery School in Ireland. Those three months abroad gave her a deeper understand of kitchens their processes, enhanced her passion for food and the culinary experience, and opened her eyes to new ideas in the hospitality industry.
Caitlin’s passions are events and food. She loves meeting with new guests and helping them create their perfect event. Some know exactly what they want, others need more help. Caitlin strives to help both. Being able to share our food and the philosophies on how and why we cook they way we do is a highlight of her job. Outside of work Caitlin loves cooking, baking, yoga, nature, traveling, playing with her adorable nephew, practicing her broken French language skills and honing her expertise in Sudoku puzzles.
Brandon Clark, Sous Chef
Our talented Sous Chef, Brandon Clark, has worked tirelessly to grow from the bottom up in the Culinary World. He started as a dishwasher in an 850 seat banquet center, and within 3 years worked his way up to Assistant Banquet Chef. After starting with the Roadhouse in 2010, he quickly learned every station in the kitchen, and it wasn’t long before he joined the culinary leadership team first as a Supervisor, then as a Sous Chef.
Chef Brandon’s greatest passion has been his contributions to Cornman Farms, where he has spent three seasons seeing everything through on the fields, from ordering and planting seeds to maintaining and harvesting crops. It is no coincidence that his familiarity with the produce the Roadhouse brings in from Cornman comes through in the flavors of the dishes he helps create. He has truly lived farm to fork by coming from the farm to the restaurant on the same day and cooking what he had just harvested hours earlier. It is possible that he has isolated a new type of tomato, and we look forward to trying it soon.
The leadership skills Brandon brings to the kitchen are evident in the way he coaches his team in a direction that benefits the team and the Roadhouse. Outside of work, his passions include museums, particularly the Detroit Institute of Art, and gathering random tidbits of information that he can share with his friends at the restaurant.
Loren Ferrer, Roadshow Manager
Our Roadshow Manager, Loren Ferrer, developed his food talents at the Great Lakes Culinary School in Traverse City, MI, and earned his degree in Business Management at Davenport University. After honing his skills in Traverse City, he brought his assets to the Roadhouse in 2014 and has led the Roadshow to a new level of excellence.
After participating in Zingerman’s Leadership Development Program, Loren has contributed an incredible amount of growth in the Roadshow by making meaningful improvements to operations for his team. His compassion for his staff and long hours working alongside them have illustrated his enthusiasm for providing great service both internally and externally. Since he has started with us, the profitability of the Roadshow has flourished. He has spearheaded the implementation of a handheld ordering system that will boost the speed and accuracy with which the Roadshow team can take orders from the guests. And his sandwiches are delicious.
Loren is passionate about leadership and is always looking to be green and growing. He enjoys food and cooking both inside and outside the Roadshow, but his talents are not limited to the culinary world. He is also an avid fisherman, and he builds state of the art fishing rods. He loves his two small dogs and spends a great deal of time spoiling them.
