The Team

Bob Bennett, Head Chef

Good Service Is:

Hard to define. It is a moving target every time we plate a meal. In this business (and most others), it is the end goal, but the path and process to get there is where the fun really happens.

What Motivates You:

The food and the people. Having the responsibility to put an honest plate in front of our guests that I feel good about. And the people I work with day in and day out, getting the chance to see them grow and learn.

Favorite Thing on the Menu:

Pulled pork. The hogs that we get from Homer, Michigan are so consistently great. Our pitmaster handles them so well. The Eastern North Carolina vinegar sauce and the pork fat on our brioche bun from the Bakehouse makes it an incredible experience.

Favorite Thing from another Zingerman’s Business:

Outside of coffee from our Coffee Company, I would have to say the the ham and cheese croissant from the Bakehouse. It is everything I need in a breakfast.

Best Kept Secret at the Roadhouse:

The fish and steak programs. We have some of the best meats and fish in the country I feel.

Favorite Roadhouse Memory:

Opening night. It was so crazy and it was my first night in my first real restaurant position. I am so proud of all the things we have achieved from that day.

Tell Us Something Most People Don’t Know About You:

Everything I have learned in my career is in this restaurant. I didn’t go to culinary school, I have never trained overseas. The food I make and have made at the Roadhouse has been my education.

Lisa Schultz, Restaurant Manager

Good Service Is:

Getting it right the first time, with any aspect of service. Consistency is one of the hardest things to achieve and I have spent much of my professional career teaching and training others on how to provide an accurate, friendly and memorable experience every time someone steps foot inside the Roadhouse.

What Motivates You:

I am an achiever and get motivated by accomplishing the things I set out to do. Having a great team of folks to work with, a wonderful group of patrons and feeling like we accomplish our goal of providing an experience at the Roadhouse that people want to come back for again and again makes me eager and happy to keep moving forward.

Favorite Thing on the Menu:

Crab cakes, scallops, chicken fried steak, Ig Vella’s macaroni and cheese, fried chicken, burgers ….. I could go on forever!

Favorite Thing from another Zingerman’s Business:

The Coffee Company’s toast bar option. Yuuuuuuuummy!

Best Kept Secret at the Roadhouse:

Our fabulous bar ingredients and superior beverage offerings including being able to get 30% off bottles of to-go wine every day of the week!

Favorite Roadhouse Memory:

One of my favorite memories at the Roadhouse was moving from being a server to a front-of-house assistant manager. This was such a defining moment for me in gaining confidence and starting my leadership role at the Roadhouse.

Loren Ferrer, Roadshow Manager

Good Service Is:

Great service is recognizing what your guest wants from their experience. Sometimes they are looking to be your best friend and wants a “Cheers” experience, while others are looking for you to get their food quickly, accurately and politely. Recognizing the needs of your guest is great service.

What Motivates You:

Seeing my team being successful. Hitting new sales goals!

Favorite Thing on the Menu:

Ribeye and Kale salad

Favorite Thing from another Zingerman’s Business:

Pecan Pie from the Bakehouse

Best Kept Secret at the Roadhouse:

Kids nuggets with regular buttermilk fried chicken breading!

Favorite Roadhouse Memory:

Giving out my first raise.

Tell Us Something Most People Don’t Know About You:

I build fishing rods

Bethany Zinger, Catering Manager

Good Service Is:

To me good service is exceeding the expectations of everyone you come into contact with. It could be something as simple as remembering how someone takes their coffee. It all comes down to anticipating what those around you need and want, and then trying your best to do it.

What Motivates You:

I would say that challenging myself and learning new things is what motivates me most. Albert Einstein said it best “if you stop learning than you start dying”. Luckily for me this job has an abundance of opportunity to learn and grow.

Favorite Thing on the Menu:

This is such a tough question! I love so many things on our menu that it is hard to choose just one. But if you are forcing me than I would have to say it’s the Fried Chicken Mac. It’s cheesy, it’s crunchy, it’s really the whole package!

Favorite Thing from another Zingerman’s Business:

I find there is nothing better in the morning than toasted onion rye from Zingerman’s Bakehouse! Especially when you have a cup of Brazilian Sweet Yellow from the Coffee Company to have with it.

Best Kept Secret at the Roadhouse:

The best kept secret at the Roadhouse is the support staff! We couldn’t make any of this happen without them. Everyone from a busser, to a back of house prep person, to a dishwasher are an integral part of why we are able to do what we do.

Favorite Roadhouse Memory:

My favorite RH memory was the first time I worked during my birthday. The day had been longer than a normal day because I had class. I was a little tired and kind of cranky, while helping a guest. All of a sudden from behind me I hear singing! It was half the staff standing in the vestibule with a giant board of desserts. It totally turned my day around and made me feel incredibly special.

Elsha Chapman, Front of House Team Leader

Good Service Is:

Making a personal connection and showing guests the exact experience they are looking for!

What Motivates You:

Our Guests and staff. My goal is to always maintain, and improve, the Zingerman’s dining and work environment.

Favorite Thing on the Menu:

Man! That’s a tough one, there are just so many choices, but my go to lately is sautéed scallops with bacon braised greens and Carolina Gold Rice.

Favorite Thing from another Zingerman’s Business:

#18 Georgia Reuben at the Deli

Best kept secret at the Roadhouse:

Fried Original Zzang Bar!

Favorite Roadhouse Memory:

The Roadhouse has become almost a second home for my parents. All the staff know, love, and keep them company when they come in to dine. This means a lot to a daughter who works long days.

Tell Us Something Most People Don’t Know About You:

This question is hard to answer… I’m pretty much an open book, just ask my co-workers.

Sarah Bartlett, Catering Manager

Great Service Is:

Great service to me is genuine interactions with guests and staff, mindfulness, energy management, servant leadership, honesty, and going the extra mile.

What Motivates You:

I am motivated by learning new things and overcoming challenges.

Favorite Thing on the Menu:

My favorite menu item is our dry-aged tenderloin, hands down!

Favorite Thing from another Zingerman’s Business:

My favorite thing from another business is a tie between Manchester Cheese from the Creamery and Miss Kim fried chicken.

Best Kept Secret at the Roadhouse:

The best kept secret at the Roadhouse is 30% off all bottles of wine on Tuesdays, and every day when ordered to go!

Favorite Roadhouse Memory:

My favorite Roadhouse memory is walking in for an interview in August 2012, knowing absolutely nothing about Zingerman’s or how it would end up impacting my life in such a positive way.

Tell Us Something Most People Don’t Know About You:

Most people don’t know that I spent most of my childhood in beautiful San Diego, CA.

Brooke Vanover, Front of the House Assistant Manager

Great Service Is:

Great service is the ability to adapt to your guests needs and desires. It’s all about anticipating their questions and being able to give a great and helpful response. The key to giving great service is knowing about the place you work, and the things that you serve/provide. The Roadhouse does an incredible job of teaching us about our products and business practices.

What Motivates You:

I am motivated by my desire to learn. I love working in hospitality because, even as a manager, I am constantly learning new things every single day. Here at the Roadhouse I have learned a lot about food, sustainable practices, and open book management. I’ve also been taught a lot about how to be the best possible service provider I can be.

Favorite Thing on the Menu:

The grits and bits waffle for breakfast, fresh salmon for lunch and dinner!

Favorite Thing from another Zingerman’s Business:

I love the Bulgarian Toast from Coffee Co

Best Kept Secret at the Roadhouse:

Burger punch cards! If you love our burgers, this is a great deal. You get a free burger when you’ve completed the card.

Favorite Roadhouse Memory:

One of my favorite memories here at the Roadhouse was back on the day I did my job interview. I was so excited to come in for my interview, because I had heard great things about this organization as a whole, and I was looking forward to working in a full service restaurant again. The manager got to know me a little bit and I really felt comfortable with the whole process. Then, when I left, there was a farmer’s market going on outside! I was so happy to see this restaurant being actively involved in the local community, and I got my very first houseplant from the Westside Farmers’ Market! It really was a good day.

Tell Us Something Most People Don’t Know About You:

Most people don’t know that I love to cook and bake! I studied culinary arts in high school and  while I was receiving my degree in Hospitality Mgt.
