Howdy! We are so excited to welcome a long-time friend of Zingerman’s, Rolando Beramendi, to the tastiest duel this side of Jackson Ave. He is a cookbook author and founder of Manicaretti Imports, an importer and wholesaler of artisanal Italian products. We have used Rolando’s products from Manicaretti for many years. Not only will Rolando make an appearance at the Roadhouse on June 13th, he will also have events with Zingerman’s Bakehouse that week. Stay tuned for other potential food sparrings around the ZCoB!

Rolando’s artisanal pantry items from Manicaretti, including a variety of heirloom spaghetti from Rustichella d’Abruzzo, are the stars in this showdown of a dinner. Chef Bob Bennett loves the flavor and texture of the Rustichella d’Abruzzo pasta, and often features it on the Roadhouse menu. For this dinner, he will corral rustic, authentic flavors for each spaghetti dish with Rolando’s favorite Italian products, such as Mirogallo Spaccatelle Tomatoes and IASA hand-packed anchovies. Attendees can expect to take a wild ride as Rolando shares his stories behind the value of these delicious, simple ingredients as they taste them in each course.

During this special event, we will also have for sale Rolando’s book, Autentico, which has blazed a trail of what it means to make and eat an authentic Italian meal. Rolando’s philosophy of “if you have a great pantry, you can be a great cook,” echoes on the pages of Autentico. Paired with dinner, the dessert offered on our event’s menu is a recipe from Autentico. A fun tidbit to note is that the pasta and several of the authentic, Italian ingredients that are featured on the special dinner menu from Manicaretti, will be available for purchase as well.

More About Rolando Beramendi

Rolando Beramendi’s passion for bringing authentic Italian ingredients to American pantries began when he moved to San Francisco and experienced difficulty finding high quality Italian food products. In 1988, Beramendi founded Manicaretti, which is the Italian word for little delicacies or treats, to import products from Italy’s finest artisan producers to the plains of America. The foundation of Manicaretti was built through family, friends, and word of mouth. Through the gems that were discovered across treks and journeys of travel to keep centuries of old traditions alive, you can be sure that any Manicaretti product that lands on your kitchen table, is one of authentic and pure Italian authenticity. Rolando stays true to the traditions taught to him by artisan food makers and chefs who have been an integral part of his extended Italian family. It is an honor to welcome our long time Italian friend at this special dinner.

Dueling Pasta Primi (Family Style Entrée)

Primo Grano Spaghettoni Carbonara
Rustichella d’Abruzzo thick spaghetti made from white heirloom durum wheat. Tossed with pancetta, Parmigiano Reggiano, Tellicherry cracked black pepper, and farm fresh egg yolk.

Saragolla Spaghetti Aglio Olio e Peperoncino
Rustichella d’Abruzzo spaghetti made from semi-whole heirloom wheat. Tossed with olive oil, garlic, and chile pepper.

Dueling Pasta Secondi (Family Style Entrée)

Farro Spaghetti Amatriciana
Rustichella d’Abruzzo spaghetti made from freshly milled whole grain farro. Tossed with a sauce of tomatoes, guanciale, and Pecorino Romano cheese.

Corn Spaghetti alla Portofino (GF)
Rustichella d’Abruzzo spaghetti made from organically grown, non-GMO corn. Tossed with a house made tomato and basil sauce.
